In the meantime I created an installer for this purpose [1] which includes
two CUPS filters, the pdftops binary to produce Level 1 PostScript and a
small Droplet-Application, suitable to patch PPDs so they ensure the newly
installed Level 1 printers are used while printing.

The whole procedure doesn't depend on GhostScript or foomatic-rip [2] but
instead the PSNormalizer Framework in MacOS X 10.3 and the pdftops binary
from the Xpdf suite [3]

At the moment, the filters do NOT pass PPD features through, but most PS
Level 1 printers doesn't depend that much on such features, so it should
just work :-)
