I have an iMac OS-X v 1.5 & use Word X v 1.2
When I copy a segment from one document and paste it into
another (both typed using Times New Roman) the Font changes
to Apple Chancery. How do I stop this and keep the Font as
is? Thanks for any help.

Make sure the incoming text has the same STYLE name as the existing text in
the document.
When you paste styled text into a document, it should normally adopt the
formatting of the style in the existing document.
In Word, all text is styled; if it is nothing else the style is the default
"Normal" style.
