I have a B&W G3 with 2 internal hard drives, one with 9.2.2 and the
other one with 10.2.6.

I want to be able to start up ONLY in 10.2.6, while also having classic
around when I need it.

I also want to make sure that someone *cannot* start up in 9.2.2 using
Option/Command/Shift/Delete or the Startup control panel.

Is this doable?
Is there something really easy or obvious that I'm overlooking?
I'm willing to reconfigure everything if that's necessary.....

Yes.

Not that I know of -- maybe someone else can think of something
simpler. My solution, detailed below, is somewhat tedious.

Copy your OS 9.2.2 System Folder somewhere. Then Erase your OS 9.2.2
drive using Diskutil from OS X -- when you do this do not install
the Mac OS 9 drivers. Then copy the the OS 9.2.2 System Folder
back onto that drive. Classic will find it and use it, but you will
not be able to boot OS 9.2.2 on that drive.

This is what I did, although I haven't tested it yet. You need Firmware
v4.1.7 or higher. Go to:

http://docs.info.apple.com/article.html?artnum=120095

and download the application Open Firmware Password. Install and
configure to your liking. Without the correct password, it cannot be
started on any disk but the one selected in System Prefs.
