There is also Gnuplot. I also seem to recall an Hp48 emulator.

Gnuplot, with the addition of "aquaterm" will run as either an X11
application or an Acqua application. Since I happen to have X11.app
running (this is coming from Xemacs), I fired up gnuplot in an xterm
window, and it set the terminal type to "X11". Then I launched
Terminal.app and fired up gnuplot again -- this time the terminal type
was "aqua".
